It’s coming to summer in my region and this means a change in the garden. Today I would like to share a neat tip for fast-growing summer vegetables. Some leafy greens and root vegetables take two months or less to harvest from the time of sowing seeds. Arugula, often incorporated in salads and sandwiches, is one crop that can be ready to harvest within 20-30 days. Additionally, it’s a cut-and-grow-again crop, meaning you can enjoy several harvests from the same plant. Beets can be grown in limited spaces and their small, tender roots are usually ready in 6-8 weeks. Cucumbers take about two months to harvest with optimal conditions like abundant sunlight, warm weather, and frequent watering. Okra is simple to grow and can be harvested within two months. It flourishes in hot weather and with well-draining soil. Lettuce is also a great fast-growing vegetable because it has a short growth cycle and shallow root system.
